Rakkyo are a type of Japanese shallot which is usually uncooked and pickled in a light vinegar like this one. Japanese curry is incomplete without rakkyo pickled shallots, and this pickling vinegar is just what you need to make it!

Otafuku's Rakkyo Vinegar is made using plain vinegar brewed with soft water and seasoned with sugar and salt.

You can use this shallot vinegar to make Rakkyozuke (pickled Japanese shallots) and other pickles such as green chili, cucumber, green papaya, carrot, plums, ginger myoga and more.

    Good Stuff

    Rakkyoo-su (shallot vinegar) is sold everywhere in Japan. It's in every supermarket. So I'm really surprised I could not find it in any Japanese markets in Los Angeles, Orange County, nor San Francisco. It's sweet and good for making various kinds of pickles and probably some dressings
