The blade is made of premium steel using a method called “Edo-togi”: a hand forging technique that makes the blade edge thinner and creates a more acute angle resulting in excellent sharpness and minimum cutting resistance.
The handle is made with rust- and dirt-proof stainless steel. The inside of it is hollowed out so the knife is lighter than ordinary knives. It also has a stylish uneven pattern with slippage prevention processing.
Although the knife is serrated to facilitate cutting, you do not have to exert force to and it smoothly cuts even stringy meat like tofu or butter.
