The copper conducts and retains heat well, even when you're using a low heat setting. Like with most copper cookware, the interior of the pan has been lined with another metal. In this case, it has been lined with tin, giving it great oil distribution as well as resistance to rust, damage by acid, and corrosion. In addition, tin-lined copper is far more non-stick than the alternatives, like steel-lined copper.

Before the first use, wash the pan with a neutral detergent. Do not wash with a hard sponge or scrubbing brush.
To wash this pan, simple use a small amount of detergent and warm water. You can wash it with your hand, or with a soft sponge. You should never scrub it with a hard or stiff brush or sponge. If the pan has stubborn bits of food stuck to it, simply half-fill it with water, add a little dish detergent, and simmer it on the stove for a few minutes to loosen.
