Fundokin Shoyu Co., Ltd. is a specialist in soy sauce from Oita prefecture on the island of Kyushu. They adopt traditional methods of processing soy sauce without relying on machines and digital data as they believe that a human’s five senses are the key factor in creating genuine soy sauce. To do so, they use their in-house wooden barrel to make soy sauce with the help of the microorganisms that settle inside them. Surprisingly, their wooden barrel is huge: it is 9 meters high and hold the Guinness Record for the world’s largest wooden brewing barrels.

Along with soy sauce, Fundokin also produces miso paste, dressings, and condiments. Their miso pastes feature an intense aroma thanks to a high ratio of koji malt while their dressings include healthier variations, from oil-free sesame dressing to sugar-less shiso perilla dressing. Made with the local yuzu citrus, their yuzu kosho seasoning paste has a refreshing spiciness and a distinctive yet pleasant aroma. They strive to create handmade and natural products that supply wholesome foods.
