Hakusen Shuzo, a historic Japanese brewery founded around 1850 in Kawabe, Gifu Prefecture, nestles in the foothills of Japan’s southern Alps.

Specializing in hon mirin, sake, and shochu, Hakusen Shuzo has been a family-run brewery for generations, earning a reputation among Japan’s top chefs for its traditional, high-quality products.

Using only the finest locally grown ingredients, Hakusen crafts every key component in-house and takes pride in its meticulous aging process. Their signature Fukuraijun hon-mirin matures for three years, while the exquisite Koko hon-mirin is aged a full 10 years, delivering unmatched depth and sweetness.
