Hita Shoyu, located in Ōita Prefecture, is originally a koji-ya (maltster) established in Edo period since 1843 which specializes in producing soy sauce, miso paste and, amazake (sweet fermented rice drink). This product is a blended red miso paste handmade by professional artisans.
The miso made from a blend of sweet and light flavored barley miso and mouth-filling soybean miso. With this combination this miso contains very rich aroma and umami.
Hita Shoyu values making the products from natural ingredients. The core ingredient of the malt is water, and they extract it from underground subterranean vein located in the mountainous Hita Basin. This exquisite water makes this product more delicious.
This miso already includes two dashi broths of bonito and kelp. Just dissolve this miso paste into hot water and it is ready to eat. Add your favorite veggies, tofu, and seaweed according to your preferences.
