Ippodo Sayaka no Mukashi Matcha is a high grade matcha powder with a subtle balance of natural umami flavour and a touch of astringency.
This Japanese green tea powder was named by Hounsai Sosho XV, the great grand master of the Ura-Senke family of tea masters.
Pairs well with slightly sweet confections.
For usucha (light flavour matcha):
- Sift 2g (0.07 oz) of matcha into a bowl.
- Add 60ml (2 oz) of hot water at 80º C (176º F).
- Whisk vigorously 15 seconds.
For koicha (strong flavor):
- Sift 4g (0.14 oz) of matcha into a bowl.
- Add 30ml (1 oz) of hot water at 80º C (176º F).
- Mix slowly 15 seconds.
