There is a very appealing & delicious balance in this Soy that marries a lot of bright floral quality for my pallet (for soy sauce) and a textual savory depth. I find the saltiness moderate and appealing for a lot of the food I have at home. I make wine for a living and i try to raise this kind of balance in wine. My business partner who's more food obsessed than me had this in a "soy tasting" years ago and it to stood out. I've bought it for years from whoever wasn't Amazon since.
