This special sesame tofu is unlike anything you've tried before. Rather than making tofu from standard soy milk, like usual, Kikuya made this tofu from soy milk extracted from the Tamba Black special soybean variety.
Tamba Black is an extra large variety of black soybean that has been grown in the Tamba region of Kyoto since ancient times. It is known for its pitch-black color, chewy texture and especially delicious taste. Tamba's climate is ideal for bean production, because of the large change in temperature between day and night, beans there grow to be extra large with a much richer taste. Tamba black soybeans have been highly regarded for centuries, as they were first distinguished from the standard soybean nearly 1000 years ago.
In addition to the special Tamba black soybeans, Kikuya have blended fragrant sesame seeds into the soy milk to enhance the tofu with a toasted sesame flavor. Enjoy this tofu as it is, or heat it up. It's also a great addition to soup.
