Tamba Dainagon azuki, the bean variety used in this zenzai, is a rare azuki bean variety highly-regarded across Japan due to its high level of sweetness and glossy appearance. Tamba's climate is ideal for bean production, so many of Japan's best bean varieties are grown in the region.
