Kiya No.160 Edelweiss Steel Japanese Kamagata Usuba Knife 18cm

KIYA

Kiya is a traditional cutlery shop founded in Japan in 1792. The No.160 series is Kiya's top grade western knife lineup noted for its great sharpness, toughness, and usability.

The base material is a type of stainless steel called New Edelweiss that is produced by Austrian steel manufacturer BÖHLER. Their superior metal features outstanding hardness that can deal with heavy use.

In addition, with the special heat treatment, this kitchen knife contains less carbon than its ordinary counterparts. As a result, it not only has great corrosion resistance but it is also easy to sharpen the blade.

The Kamagata knife is a single-ground edge knife designed to cut or peel the vegetables precisely. However, this product can also cut meats and other foods.

This knife has a bolster, so it is easy to wash the area between the blade and handle.
