How To Make Anmitsu At Home (Japanese Summer Dessert Recipe)
Anmitsu is a traditional Japanese summer dessert, consisting of small cubes of semi-translucent agar jelly, known as Kanten in Japanese, which is made from red algae, making it plant-based.
Kanten itself has no flavor; however, its jelly texture is enjoyable. It is renowned for its high fiber content and low-calorie nature. In Japan, it is believed that consuming a lot of kanten contributes to healthy skin.
Anmitsu is typically served with fruits, shiratama dango, and anko (red bean paste). A scoop of ice cream is placed on top, and kuromitsu black sugar syrup is drizzled over it. The vibrant colors of the fruits combined with the ice cream and kuromitsu create an extremely appealing and flavorful summer dessert. The inclusion of the cool kanten jelly makes anmitsu perfect for escaping the summer heat.
Anmitsu originated from a sweets shop in Ginza, Tokyo, during the Meiji Era (1868-1912). As Ginza has always been the most famous high-end shopping area in Japan, anmitsu carried a somewhat luxurious image.
The term "anmitsu" translates to "red bean paste and syrup." There is a similar dessert in Japan called “Mitsu Mame,” but the difference lies in the inclusion of red bean paste in anmitsu.
When shopping for kanten, you'll find it in four different forms: powder, stick, thread, and flakes. For this recipe, powdered kanten is used as it is the easiest for beginners to work with and evenly dissolves in water.
You can prepare the kanten jelly and shiratama dango for anmitsu in advance and store them in the refrigerator until needed. When ready to serve, assemble the kanten jelly with the shiratama dango, fruits, ice cream, and kuromitsu.
Anmitsu is an ideal dessert for summer, not only for its refreshing taste but also because the kanten jelly does not melt even in higher temperatures.
Some people refer to anmitsu as a “sweet that brings coolness.” Enjoy your summer with this delightful Anmitsu and stay healthy!
