Ishimago Honten is a distinguished Japanese soy sauce and miso maker, rooted in over 160 years of tradition in Yuzawa, Akita Prefecture.

Since its founding in 1855, Ishimago has maintained artisanal methods, using locally sourced ingredients, cultivating their own kōji mold, and aging products in century-old wooden barrels and storehouses. 

These carefully controlled fermentation environments, rich with unique Ishimago Ebisu yeast, give their soy sauces and miso a deep, unparalleled flavor that food enthusiasts cherish.

Their signature offerings include the 2-year-aged Saishikomi Shoyu, a double-brewed soy sauce with intense richness, as well as first-press soy sauce and a variety of miso pastes, such as black miso and mild rice miso. Every step of production is handcrafted by skilled artisans, ensuring authentic, additive-free seasonings that capture the essence of traditional Japan.
